We Cook in a Pre-Heated stone Oven

To avoid a soggy crust, we at the Brick Oven Pizzeria use a brick stone oven. This helps absorbs moisture from the dough and provides a uniformly heated surface resulting in a crispier crust.  We pre-heat our oven for an hour before placing the pizza in for baking. We also use a pizza screen; this screen helps to permit air to circulate under the crust to give it a nicely-baked bottom and even more crispier crust.
